Haven't we had the same issue in previous terms?  Or did email enrollment automatically hide the student's address until the student explicitly unhid it?

In any event, I don't see any way to do this--not an obvious one, at least.  If there were a single table with only students' preferences and a predefined field for hiding email, we could issue a simple query to set it to true.  Unfortunately, all user preferences are kept in one table, and I can't even figure out which keyword governs email hiding.  No help on moodle.org, either.

In short, after some detective work to identify exactly how email hiding is stored in the database, it would take some non-straightforward code to make the changes, and I just don't think there's time before the term starts.  And after the term starts, we'd be mucking with preferences that have already been set.
