Joe,

This happens when the student set his email address to be hidden in his profile.  It's a Moodle security feature that is intended to assure that a student who doesn't want her address to be visible remains invisible when she sends a message.  It will happen for both internal Moodle IM-style messages and for QuickMail messages.

The reason you sometimes see the tag at the bottom is that if you're not logged in, Moodle will automatically forward a copy of an internal Moodle message to your external mail address, if you have that preference set.  If you're logged in at the time the message is sent to you, it's not copied to your external email.

The bad news: there's nothing we can do to change this behavior.  If the student doesn't mind setting her address to be visible, you won't have to worry about the 'noreply' issue (although in Nicole's case, it's also true that she hasn't put in a valid email address).  But if your students don't want to do that, there's not much that can be done.

We are looking into adding a third-party module to do internal mail (mail inside Moodle, instead of using an external email address) that would have a more mail-like interface: a mailbox, sent and received items, and so forth.  We'll be testing it during the Summer and assuming it works, will plan  to have it available for Fall.  This will eliminate a lot of the issues we're having with email addresses not being sent, difficulty replying because of no-reply addresses, and so forth.
