Hi Mara, 
To get you started - if you create an off-line assignment (as an activity)  It will automatically create a column in the grade book for you to manually enter the grades. I do not have an answer to the second part so I'll leave this in the queue for Joe.

Can I get some help with adding another category on my GRADES list in Moodle for FINAL GRADE as soon as possible?  I would like to enter these grades myself as with the discussion (forum) grades. 
 
 
Also, I will need help with including the FORUM grades for the WInter SP220 class that can be added by me as Joe did for this terms SP218 class.
