I have no courses of my own.  I don't see Administration block unless I enter one of the Moodle workshops (yours or Dan's).  If I do that, I see an administration block, but no Courses item, or any other course level menu items.  Michael

You should currently have the ability to create a new course.
1. Login to Moodle
2. go to Administration > Courses
3. Click "Add a new course"  
4. Set Category:  Admin
5. Fill in the rest of Setting page
6. Save, you now have a course shell to work with
